FEW Spirits hails from Evanston in the United States of America, a city that suffered Prohibition for over one hundred years thanks to many of its advocates hailing from its dry streets. Thankfully Evanston is now home to this excellent craft distillery which takes its name ironically from the initials of Frances Elizabeth Willard, a key figure in the Temperance Movement. For nearly a century Evanston, Illinois, the home of the Temperance Movement, was a dry city. In dire need of liquor laws that weren’t penned the same years as the invention of the band-aid, FEW’s master distiller Paul Hletko overturned century-old prohibition laws to become Evanston’s first distiller of grain spirits within the city limits. In a world chock-full of mass-produced spirits, only few remain truly handcrafted, and small-batched. FEW Spirits are a new take on timeless distilling techniques, and transcend the oft-ordinary taste we’ve all grown accustomed to. Distilled from the very best grains, aged to perfection, and bottle under their own roof, FEW remains in their own hands until distribution. About the brand

FEW Spirits was founded in 2011 by Paul Hletko. The distillery is located outside of Chicago in Evanston, Illinois. The name is taken from Frances Elizabeth Willard’s initials, an historical figure who made Evanston the home of the Woman’s Christian Temperance Union. Ironically, Frances was a staunch supporter of prohibition and was one of many who played part in ensuring Evanston remained a dry city beginning in 1855 and finally ending in 1972. The company currently produces four spirits - Bourbon Whiskey, Barrel Gin, Rye Whiskey, and American Gin. FEW Bourbon is aged in small barrels ranging in size from 5 to 30 gallons. The barrels are made from Minnesota oak which has a shorter growth season and tighter grain than other types of oak.

Fennel is practically overwhelming. Not my top pick I incline toward the pendulum immovably in juniper domain. While I wasn't as much an enthusiast of this straight it makes for some truly astounding and delightful mixed drinks. It makes a truly intriguing martini and a genuinely one of a kind carcass reviver #2.

Tasting Notes

Nose

Juniper blossom makes itself present first followed by mulling spice and a grainy quality.

Taste

The body has a little weight behind it with herbaceous notes off-set with candied orange peel and fragrant juniper.

Finish

The finish is warm and peppery with a little spice on the tail-end.
