It’s fair to say that the rarer an item, usually the more desirable, right? Well at a limited release of only 35 barrels, we’d have to say that William Heavenhill’s Barrel Proof 12 year old Kentucky straight bourbon is the kind of whiskey what would more than live up to that label. The nose is enriched with freshly baked Christmas fruit cake with blended ribbons of sherry, dark fruit melted with even darker chocolate, and hits of spiced oak soaked in sherry. The taste is warm and delicate then shifting into a tide of flavors – salt baked pretzels, smoky red fruits, and more hits of dark chocolate with fragile wafts of smoke surrounded by more sherry. A bursting bite of hazelnuts soon follows towards a finish of rich chocolate cake, fine red wine, and bites of caramel dates smattered with splashes of smoked plums and nuts. About the brand

Originally known as ‘Old Heavenhill Springs’ distillery, Heaven Hill, was established in 1935 by a group of Bardstown-area investors, including the five Shapira brothers, David, Ed, Gary, George and Mose. Prohibition had recently ended and they sought to produce and market bourbon and American whiskeys. During the 1990s Heaven Hill diversified its portfolio, acquiring brands and moving into other areas beside whiskey, such as gin, vodka and liqueurs. Today, Heaven Hill is the largest independent, family-owned and operated producer and marketer of distilled spirits in the USA and is thought to be sixth-largest spirits supplier in the United States with the second largest stocks of aging Bourbon whiskey with an inventory in excess of one million barrels. Heaven Hill remains independent and controlled by the Shapira family.
