Aged at least 3 years in new American Oak #3 char barrels, these barrels are hand picked by Seth Dettling for extended aging. These barrels tend to come from the upper portions of the rickhouse, which experience the greatest temperatures. The extreme dark color and richness of the whiskey shows the potential for bourbon aged in the climate. Big Escambia Spirits decided to do something that had not been done before: make an Alabama whiskey. They use six different grains in their mash, which is not something usually seen in the whiskey world. This is a “field to bottle” bourbon born in south Alabama and deserves to be called “Alabama Bourbon”, according to the label. The Dettling Cask Strength Bourbon is a single barrel 110.8 proof bourbon that has been aged for just over 3 years. Considering its age, the color is very impressive, it is much darker than what one would expect. Established as F.X Dettling in 1867 by Franz-Xaver Dettling in Brunnen, Switzerland - Dettling, aka Dettling 1867, produced quality bourbon for over 150 years - becoming the most awarded Kirsch in the world. Tasting it again for second time. Powerless. Appears to be extremely youthful. Just not develop enough. Wont purchase again except if it is matured 8 to 10 least.

Sweet smell with a consume. Liquor taste with toffee insights. Espresso ish as well. Very little consume. OK yet parcels better out there.

Tasting Notes

Nose

Vanilla and corn with lots of sweet oak. There is a hint of cherries and berries in the background that reminds me of a pipe tobacco in the pouch.

Taste

Vanilla and berries with a lot of sweet oak wood and baking spices. Tasted with a dried cranberry will enhance the vanilla but reduces the oak and spice somewhat – it is still there but not as pronounced. Tasted with a pecan enhances the cherry flavor and makes the baking spices definitely nutmeg and allspice.

Finish

Starts spicy with some cinnamon but quickly dries to an oak wood. Very long finish. The cranberry makes the finish shorter and less cinnamon and more oak. The pecan really brings out the nutmeg and allspice flavors and keeps a bit of the oak.
