While it may be slightly overshadowed by the popularity of Shiraz, Cabernet Sauvignon's reputation exceeds almost all other varietals. Delicately dry and often medium to full-bodied, it is one of the most diverse and versatile grape varieties in circulation and is used prominently in blends whilst being able to punch well above its weight as a standalone. Punchy acidity and strong tannins are to be expected, as well as refined seasonal fruits, aromatics, and oak which are typical of its palate.
